From almost a stone’s throw across the valley (well ok, a trebuchet throw), We are delighted to collaborate with our good friend Neil to offer two organic apple cider vinegars for sale on the website. Since all the apples are pressed here, we can fully attest to their very fine qualities!
Neil’s Orchard
Side Hill Cider Mill Apple Cider Vinegar is produced at Side Hill from organic apples grown here in Vershire since 1987 (certified since 2010) in his small, 200 tree orchard. While the vast majority of his trees are selected wild, a few have been grafted over to heirloom varieties; Golden Russet, Fameuse, Baldwin, Rhode Island Greening and Roxbury Russet with a smattering of newer scab resistant cultivars; Liberty and Gold Rush. All are selected for their hardiness and suitability for strict no-spray culture. He prunes the trees, mows the orchard and adds compost and approved organic soil amendments as needed.
Neil’s apples are pressed at Flag Hill Farm and laid down in barrels.
Aged Apple Balsamic Vinegar of Vermont
Flag Hill Farm’s exciting newest product is made from dozens of apple varieties, both tame and wild.
The resulting organic apple cider vinegar is sweetened lightly with reduced organic cider. There are no other added sugars or colorants.
Before bottling, the vinegar is aged and mellowed for over a year. Time and handmade barrels with five different woods contribute to it’s fine flavor.
Use as you would any other balsamic: as a drizzle, in marinades and glazes and for a unique twist on a classic and delicious vinaigrette.
It’s rich, complex and just sweet enough. Made only from certified organic apples!

A traditional favorite, our vinegar is slowly double fermented, aged for over a year in a cool cellar, and then bottled in glass. It's raw, unfiltered, and contains the mother.
